Five Alarm Jerky



Ingredients

3 pounds of lean beef
1/2 cup Worcester sauce
1/2 cup soy sauce
3 tablespoons brown sugar
2 teaspoons chile pepper
1 teaspoon cayenne pepper
2 teaspoon black pepper
2 teaspoons picante sauce
1 teaspoon Cajun mustard
1 teaspoon fresh rosemary leaves
1/3 cup chopped green onions
1/2 teaspoon paprika
1/2 teaspoon parsley
1 cup water

Procedure

Mix all ingredients thoroughly in a large plastic or ceramic bowl. Add meat, making sure that the meat is completely submerged. Cover the bowl with a lid or suitable wrapping and refrigerate for 12 to 18 hours, stirring occasionally. Remove meat from the marinade and dab with paper towel to ensure that all excess moisture is removed. Cook in conventional oven at 175 degrees, turning after 3 hours and removing between 5 and 6 hours, depending on preferences for hardness. If using a food dehydrator, assume drying time to be in the 5 to 8 hour range.

I too make my own jerky. If you’re ever in my area (75220, Dallas) I’m SO buying you a beer! The green onion piques my interest… will have to try it. :)
