Hare (Rabbit) Jerky

RABBIT, HARE - what’s the difference? Biologically, the difference has to do with hair, size, and eyes. A hare is larger than a rabbit, and its young are born eyes-open and with hair, of course. With the exception of size, such differences are pretty unimportant in the kitchen. But the larger hare, or an er hare, or an old-or exceptionally big-rabbit, needs moist-heat cooking such as braising or stewing after marinating.
Eating rabbit in sausage or jerky form is very healthy. Four ounces of roasted rabbit meat has 175 calories and 7.2 grams of fat, slightly less in both categories than skinless turkey dark meat. And rabbit meat has more flavor than chicken, to which it is often compared.
