Ingredients

3 pounds flank steak or London broil
2 tablespoons Hawaiian salt
3 teaspoons ginger
1 teaspoon garlic salt
1 teaspoon crushed red pepper
1 cup soy sauce
2 tablespoons sugar
½ cup pineapple juice
1 teaspoon honey


Procedure

Mix all ingredients thoroughly in a large plastic or ceramic bowl. Add meat, making sure that the meat is completely submerged. Cover the bowl with a lid or suitable wrapping and refrigerate overnight. Remove meat from the marinade and dab with paper towel to ensure that all excess moisture is removed. Cook in conventional oven at 175 degrees, turning after 3 hours and removing after 7 hours. For additional flavor, you may wish to save some of the marinade and use it to baste the jerky about halfway through the cooking or drying process.
