Turkey Jerky, Recipe #2

Turkey Jerky
Ingredients
3 pounds turkey meat
1 teaspoon Tabasco sauce (slightly more if you want more kick)
3 tablespoons soy sauce
1 tablespoon hickory seasoning
1 teaspoon garlic salt
1 ½ tablespoons Worcester sauce
2 teaspoons onion powder
1 tablespoon liquid smoke
½ teaspoon black pepper
Procedure
Precook the turkey to an internal temperature of 165 degrees Fahrenheit. Next, prepare the marinade by mixing the ingredients in a glass or ceramic bowl of adequate size. Once the mixture is thoroughly blended, add the turkey and let the mixture sit in the refrigerator overnight. Stir the mixture about halfway through the soaking process. Dry the strips off when you remove them from the marinade and dry in a food dehydrator at 150 degrees Fahrenheit for 10 to 12 hours, checking frequently toward the end of that range to ensure desired level of drying.
