Vegetarian Jerky (Where’s the Beef?)

Vegetarian Jerky
Ingredients
1 pound cube of tofu (firm works well, extra firm is even better)
2/3 cup water
1/2 cup soy sauce
1 teaspoon salt
1 clove fresh garlic (crushed)
2 tablespoons liquid smoke
1 teaspoon honey
1 tablespoon onion powder
1 dash oregano
1 teaspoon crushed red pepper (optional)
1 teaspoon finely chopped lemon grass (optional)
Procedure
Cut the cube of tofu in half and then into strips, roughly 1/2 inch thick. Next, mix together all of the ingredients of the marinade so that it is thoroughly blended. Place the marinade and cut tofu in a ceramic or plastic bowl, preferably one that is fairly shallow in depth. Make sure every surface of every piece is adequately covered by the marinade and let soak for 8 to 12 hours, stirring occasionally. Dry the tofu jerky strips in a food dehydrator or cook in a conventional oven at 200 degrees. Rotate the strips semi-regularly to ensure even cooking and remove when chewy. The strips are usually ready in 6 to 8 hours.
